- The garam masala I make is a combination of cloves, cinnamon and cardamom. If you have a good way to get cardamom seeds out of their shell, please let me know. Right now, I’m literally cracking open each pod by hand. Please and thank you.
- Makes about 6-12 batches. If you’re making a 5-pound belly, you’ll get less. If you’re curing chicken wings for some reason, you’ll get more.
- For a complex flavor like this, you’ll want to go a full two weeks on the cure.
